Grilled Spicy Eggplant

2 tbsp. extra-virgin olive oil
2 tsp. garlic paste
2 tsp. red wine vinegar
1/2 tsp. kosher salt
crushed red pepper flakes
Chopped parsley or mint
- Heat a stovetop grill pan over medium heat.
- Cut eggplants crosswise into 1/2-inch-thick rounds.
- Mix extra-virgin olive oil with garlic paste, red wine vinegar and salt, and brush mixture over eggplant slices.
- Grill 8 to 10 minutes, turning eggplant once, until tender. Sprinkle with crushed red pepper flakes and chopped parsley or mint.
