Yields:
Ingredients
Italian eggplants
2 tbsp. extra-virgin olive oil
2 tsp. garlic paste
2 tsp. red wine vinegar
1/2 tsp. kosher salt
crushed red pepper flakes
Chopped parsley or mint
Directions
  1. Heat a stovetop grill pan over medium heat.
  2. Cut eggplants crosswise into 1/2-inch-thick rounds.
  3. Mix extra-virgin olive oil with garlic paste, red wine vinegar and salt, and brush mixture over eggplant slices.
  4. Grill 8 to 10 minutes, turning eggplant once, until tender. Sprinkle with crushed red pepper flakes and chopped parsley or mint.
